Our Philosophy

“Our sense of taste is not being developed to its finest if measured against average, but only if challenged in its most superb way.”

Goethe

This is the viticulture we are trying to LIVE: Starting with a low cutting-level, using well-balanced manuring, providing humus-rich soil, we are trying to minimize the yield due to well-coordinated foliage work throughout the year. Choosing the right pickingtime will eventually result in extra good quality wines. Gentle grape processing and slow must fermentation ensure high aroma development of the grapes. In the end we are rewarded with effervescent wines. We only mature pure varieties of wine. Our white wines predominantly age in stainless steel tanks which guarantee fresh wines that taste fruity in a fine way. Our red wines mature in wooden casks to support their velvety character. Only a few varieties are matured in small barrels (barrique), as a specialty. These wines age in a 225 l oak cask for about one year. Altogether, these procedures enable us to develop our own taste in a most superb way.
